I love hummus! I try and have healthy snacks around the house, and so I whipped this up today. It was actually the first time making it. I love to experiment. I'm obsessed with the Trader Joe's one, and I think it came out close. I just stored it in a air tight container.
Sun Dried Tomato Hummus
Ingredients:
1 (15oz) can Chickpeas, drained and rinsed
1/4 cup sundried tomatoes (drained or re-hydrated)
1/4 cup Tahini
4 garlic cloves
1 lemon
2 tbsp. olive oil
1/2 cup water
sea salt, pepper, and cayenne pepper to taste
3 twigs of parsley
Directions:
Puree the chickpeas, sundried tomatoes, tahini, garlic, lemon juice, and oil in food processor. Add more oil or water if necessary to bring it to the consistency you like and salt, pepper, and cayenne pepper to taste.
