When life is busy, it is nice to make a simple meal that doesn't have a lot of ingredients and doesn't take a lot of time. This is a quick and easy recipe that tastes delicious!
Ground Turkey-Curry Meatballs
Ingredients:
1 Tbs. Coconut Oil
1 lb Ground Turkey
1 Egg, beaten
1/2 cup whole wheat panko
1 1/2 tsp. curry powder
1/4 tsp. sea salt
1/4 tsp. freshly ground pepper
3/4 cup chicken broth
1 cup of frozen peas, thawed
1 cup of frozen peas, thawed
Make it:
1. Preheat oven to 450 F. Brush a medium-size oven-safe skillet with the coconut oil; set aside.
2. In a large bowl combine the ground turkey, egg, bread crumbs, 3 Tbs. of the chives, curry, salt, and pepper. Form into 1 1/2-in balls, and place snugly in prepared skillet in rows. Bake for 25 minutes or until done. Let rest in pan for 5 minutes.
3. Transfer meatballs to a shallow dish. Place skillet on stove over medium-high heat. Add the broth and bring to a boil., scraping up any browned bits. Add in peas. Continue to let boil gently until liquid has reduced to about 1/4 cup. Remove from heat, then pour sauce over meatballs. Garnish with remaining chives.
Sides: I poured the meatballs, sauce, and peas over wild rice. You could also use jasmine rice.
