Thai Chicken Pizza

Well, one of our favorite meals over at our house is pizza. So, after trying for 2 hours to put little baby P down, I decided to try and make some quick dinner!
I have a homemade pizza dough recipe I make (I will post that another time), but on days when you just need a short cut, I love Trader Joe's pizza dough. Normally I buy the whole wheat, but they were out.


I know it might be weird to add mushrooms to a Thai pizza, but for me once you add the Thai peanut sauce, you can't even tell the difference. I just try to add as many vegetables as I can on a pizza. So if you don't have a red bell pepper, use any other color. My favorite is to use orange bell pepper.

They key to making a good pizza I have found, is using a pizza stone. I got this one at Crate and Barrel.


 Thai Chicken Pizza


Ingredients:

Dough-I used the Garlic and Herb from Trader Joe's
Organic Chicken-about 2 chicken breasts
1 Red Bell Pepper- cut in skinny slices
2 Green Onion stalks- minced
1 Yellow Onion-minced
5 Small Mushrooms-minced
4 Garlic Cloves-minced
1 Carrot-shredded
1/8c Thai Peanut Sauce
Pepper to taste
2-4oz(just a handful to cover the top) Mozzarella cheese *I usually just add cheese in moderation

Directions:

Preheat oven to 450 (when I'm at least half way through my cooking, I then turn the oven on to preheat)

Bake for 10 min

1. Mince the bell pepper, yellow onion, garlic, and mushrooms. Throw on the skillet, and saute with canola oil, until all the veggies are soft. I try to do it on a low heat to preserve the vitamins etc.
2. Cut the chicken in small pieces like this, so it cooks faster. I season with just pepper to taste.

Cook chicken thoroughly on a med-low heat, and cover, I turn them once.

Saute the veggies all together
 
 3. I then take a vegetable brush, and wash the carrot, then shred it like this
4. Mince the green onion, and set aside in a bowl with the carrot

Cooking is my down time, after baby boy is in bed, I like to treat myself, so I thought champagne was in order. (:

5. Next you'll roll out the pizza dough. Turn the oven on to 450 to preheat, and if you have a pizza stone, place it in the oven to preheat as well. Once the oven has preheated, then throw your dough on the stone.
 

 6. Place the peanut sauce on the dough with a spatula
7. Once the chicken and veggies are cooked. I cut up the chicken really small, and layer that on after the sauce. Then I place the cooked veggies, then I layer the carrot and green onion, then sprinkle with cheese.
 
Bake for 10 min.
 
 
 
 
                                        And voila! You have an amazing home made pizza.
