Don't you hate when you go to the grocery store...and literally a few days go by and you realize there is no food in your fridge or pantry??? What is that?! ughh...happens every week for me. So what do you do when that happens? I try to scrap together anything I have on hand that might taste good. That's exactly what happened with this recipe. They were very healthy and tasty.
I almost always have cooked chicken laying around. I usually boil or rotisserie a chicken, and split it up into at least 3 meals. I highly recommend it. It's a huge time saver.
Ingredients:
1 can of kidney beans
3 strands of green onions, diced
1 cup of cilantro, rinsed and chopped
1 cup of cooked chicken, diced
1 cup of frozen corn
4 tortillas (Ezekiel Sprouted tortillas)
1/2 jar of Salsa Verde
1 avocado, cut long ways
1 1/2 cups of mozzarella cheese
Directions:
- Preheat oven 350
- Throw the first 4 ingredients into a bowl and mix up. Then run the corn through a colander and rinse with warm water for a 20 seconds. Then toss in the bowl. Mix again.
- Evenly distribute the ingredients into the tortillas and add a little bit of cheese on each one. Then roll up and place on 11x16 glass pan or whatever size pan you think will fit 4 enchiladas.
- Top with leftover cheese and salsa Verde
- Garnish with avocado, or can mix some into the enchilada.
*Try to use all organic ingredients when possible
Side Note: I feel like anything tastes good in a Enchilada, so if you have a little left over veggies of any kind, throw the in! For example: onion, bell peppers, or mushrooms can taste good in this) Be creative, don't be afraid to switch it up. I almost always use black beans in enchiladas, but I didn't have any today, so I used kidney beans instead. I wasn't sure how it would work out, but it tasted great.After much practice, I've discovered any bean tastes good in an enchilada. I also normally use either Greek yogurt, sour cream or cream cheese of some sort, but I didn't have any- still tasted good (: Just use your resources, and almost always you can make something taste-worthy.
