Teriyaki Tilapia With Herb Salad and Sweet Potato

I found this recipe on "RealSimple.Com" and tweaked it a bit. This recipe is one of my absolute favorites!!! So quick and easy too.

Serves 4| Hands-On Time: 15m| Total Time: 1hr 05m


Ingredients

 
1 cup brown rice, or quinoa, or wild rice
     1/4 cup teriyaki sauce
limes, squeezed
1/2 teaspoon cayenne pepper
 

Directions:

 
1.       Cook the rice according to the package directions.
2.       Heat broiler. Place the tilapia on a baking sheet lined with foil and broil, basting occasionally with the teriyaki sauce, until cooked through, 7 to 9 minutes.
3.       Meanwhile, in a small bowl, combine the cilantro, mint, scallions, cayenne pepper and lime juice. Serve the tilapia over the rice and top with the herb salad.


**I paired mashed sweet potato with this dish, and it made the whole meal amazing! I just boiled the sweet potatoes I think I used 3-4 small/medium sized. I added a tiny bit of sea salt, pepper, cinnamon, and like 1/4 cup milk after the potatoes were cooked**
Tip: Almost any fresh herbs will work in this salad. If you don’t have mint, try basil, chives, or parsley.
