Healthy Cranberry Scones

I found a great Blueberry Scone recipe in "Parents" magazine. I tweaked half of the recipe including the blueberry's...haha. I love blueberries, just didn't have any on hand. You can pretty much use any dried fruit or berry in scones.  Anyway. I have never made scones before. I thought they seemed very complicated, to my dismay they are not hard to make at all! These seriously taste amazing! My husband loved them. It was tricky trying to substitute the typical ingredients for this recipe such as butter, sugar, etc. I am extremely happy with the results.  I think next time I'm going to use a little less maple syrup and coconut oil. I will test this out again soon, and will update the recipe with the results! Enjoy!

Cranberry Scones

Makes: 12 Scones

Ingredients:
1 cup whole-wheat flour
1/2 cup plus 3 Tbs, steel cut oats or old fashioned oats
2 tsp. baking powder
1 Tbsp flax meal
1 Tbsp. cinnamon
1/4 tsp clove
1/4 tsp ginger
1/4 tsp nutmeg
1/4 all spice
1/3 cup coconut oil
1/4 cup unsweetened apple sauce
1/2 cup maple syrup or palm sugar+ 1 tbsp of palm sugar
1 egg, beaten
1/3 cup unsweetened Greek yogurt
1 tsp. vanilla extract
1 cup dried cranberries(can use fresh blueberries, cranberries, etc.)

Directions:
1. Preheat oven to 350F and line a baking sheet with parchment. In a bowl, mix flour, 1/2c oats, and baking powder. Spoon the coconut oil in small drops into the flour mixture. Mix.
2. In a small bowl, whisk egg, Greek yogurt, vanilla, apple sauce, and maple syrup. Stir in cranberries. Gently stir liquid mixture into flour mixture until just combined. Use your hands to bring dough together. Refrigerate 15 minutes if sticky.
3. Mix remaining 3 Tbs. oats with brown sugar. Sprinkle half of it over a cutting board. Form dough into 2 4-in rounds using your hands. Set them in oat mixture, press lightly. Top with remaining oats and sugar.
4. Cut rounds into 6 wedges each. Set on cookie sheet at least 1in apart, bake for 24-26 minutes.

Side Note: I meant to throw in some flax seed and forgot. Definitely a great way to get some more omega 3s. Next time I will! If you have any on hand I would throw in like 1/8 cup flax seed.
