Ginger Carrot Cake Energy BItes



I found this awesome recipe on Pinterest via lacreativitedelafille.blogspot.com.

These energy bites are so good! They are sweet, they have veggies in them, their great when you need a quick snack on the go AND my 15 month old son likes them! He keeps going through these up and down stages of picking eating. The other day I tried everything...he threw everything on the floor, but he ate the ginger carrot energy ball (:


Ginger Carrot Cake Energy Bites

Ingredients:

1/4c. unsweetened coconut flakes
1/3c. raw nuts (I used almonds)
2/3. c. oats 
1/2. c chopped dates, tightly packed
1 Tbsp. pure maple syrup or local honey
1 tsp. vanilla extract
1 tsp. ground cinnamon
1/2 tsp. ground ginger
2 Tbsp. organic milk (you could use almond milk)
1/4c. chopped carrot into smaller pieces (about 1 carrot)
1/4c. raisins

Place coconut flakes, nuts and oats in blender or food processor and pulse until a flour forms. Add dates, maple syrup, vanilla, cinnamon, ginger, milk, and carrots. Blend until combined.  Place dough in a large bowl and fold in raisins. It dough seems too wet, you can add more coconut or oats until it becomes the texture of a cookie dough. Roll into balls; place in a plastic container and refrigerate.
Makes 7- large balls.

You can double the recipe; which I did the first time....knowing I would love it.
