Healthy Banana Muffins


My sweet mother gave me her classic banana muffin recipe that she made for us kids growing up. I since then have adapted her recipe to a more healthy one. These muffins are awesome!! They get devoured in our house! Muffins are so easy, and are great for breakfast, snacks, and on the go.

Andrea's Banana Muffins

Ingredients:
2 eggs, beaten
1/2 c. unsweetened applesauce
1/4 c. coconut oil
1 tsp. vanilla
1/4 c. pure maple syrup or palm sugar
3 Large bananas, mashed

1/2 c. oatmeal
1/2 c. coconut flour (can substitute oatmeal)
1 c. stone ground whole wheat flour
1 tsp. baking powder
1 tsp. baking soda
1 Tbsp. cinnamon
1/2 tsp sea salt
1/4 tsp. nutmeg
1/4 tsp. ginger powder
dash all spice 
dash clove 

Optional ingredients: 
-Throw in nuts if you like nuts in muffins
-Sometimes I'll put 2 Tbsp of 100% cocoa powder to give the muffins a chocolate taste

Side Note: I constantly switch up this recipe. For the flour part, a lot of times I do (1 c whole wheat flour, 1 cup oatmeal) or (1 c. wheat flour, 1/2 c. coconut flour, 1/2 c. oatmeal) They are all really interchangeable, so whatever you like or whatever ingredients you have on hand.
Directions:
Preheat oven to 350 degrees. Spray your muffin pan with coconut oil spray or whatever kind of oil spray you have or use muffin cups (easiest to clean).


Mix the first 6 ingredients together in a bowl except the coconut oil. If the coconut oil is solid, then mix it with the dry ingredients until its a crumbly texture. Mix the dry ingredients in a separate bowl. Slowly add the dry ingredients into the wet ingredients, mix well. 


Spoon the batter into your muffin trays. Bake for 18-20 minutes.  Stick a toothpick in the middle to verify no dough is on it, and they're done.

Serves approx. 12 muffins
