This recipe is very easy, and super good! I was trying to follow another calzone recipe, that was predominately paleo, but I didn't have all the ingredients...in fact I really didn't have any....it was more of a example to follow. Although, her paleo calzone recipe looks awesome! I love the idea of using yucca root as the "dough." To be honest, I don't even know what yucca root is...or what it looks like...but that is another adventure I am looking forward to tackle! Ground Turkey Kale Calzone
Ingredients:
1/2 tsp sea salt
1 pound ground turkey
1 onion, diced
1 tbsp marinara, extra sauce for dipping
3 tbsp fresh basil, chopped
1 strand of green onion, chopped
4 cloves of garlic ( if you have fresh garlic, chop up the strand and use in dish too)
1 1/2 cups kale or spinach, chopped
1/2 tsp fresh pepper
Optional: cilantro for garnish
Optional: Sour Cream or greek yogurt for dipping
**Use all organic ingredients when possible**
Directions:
1. Preheat oven to 450
2. Over medium/high heat cook ground turkey, and onion until cooked through
3. Once cooked, drain all grease from pan-make sure there is no moisture left in meat mixture
3. Now add in spinach or kale, basil, green onion, garlic, and marinara and cook until leaves are wilted and the sauce has been completely absorbed/cooked off
4. If you still have residual moisture in the meat mixture which has not cooked off, use a paper towel to absorb excess.
5. Remove meat mixture from heat and set aside
6. Take dough and divide into 4 equal pieces
7. Take 1/4 of the dough and flatten it into a circle, you will want it to be slightly more than 1/4" about 5-6" in diameter (If its too thin, the calzone can split open)
7. Spoon about 1/3 cup-1/2 cup of the meat mixture onto half the circle, then fold the other half over the meat
8. Using your finger or for, seal off the edges-they should be in the shape of a half moon
9. Repeat with other pieces of dough, fill accordingly
10. Carefully transfer each calzone to a pizza stone if you have one or to a parchment lined baking sheet and bake for 10-12 minutes or until nicely browned.
10. Remove from heat and serve with marinara for dipping
Makes: 4 Calzone's with extra meat filling which you can refrigerate and eat by itself the next day and throw on some steamed sweet potato wedges on top like i did (:
