Eggs, Kale, Tomato & Cilantro Hash


I've been eating healthy for years....but not as "healthy" as I thought I was until I started "The Daniel Plan" and listening to foodbabe. My goal is to try and eat vegetables for breakfast each day or as much as possible and to eat in season. I whipped this up the other morning in hopes to obtain this "reachable goal." I was honestly kind of scared to eat it. haha. I love kale, but I had put an astronomical amount in this concoction, and it seemed a bit daunting for early morning eating. I think its because I'm not used to eating a lot of veggies in the morning. Nonetheless, it tasted fantastic! That is why I am sharing it! If I didn't....well, that would just be a cruel joke on you. (:

Eggs, Kale, Tomato & Cilantro Hash

Ingredients:
 2 eggs
2 tsp coconut oil
1 1/2 cups Kale, chopped
1 small tomato, or baby tomatoes, diced
1 strand green onion, chopped
dash garlic powder
1/4 tsp pepper
few dashes of sea salt
2 tbsp of mozzarella cheese
garnish of cilantro, however much you like
optional: fresh basil, chopped

Directions:
1. Medium heat in pan, heat coconut oil, kale and green onion until kale slims down,and turns bright green. 
2. Add in eggs, garlic powder, salt, pepper, and cheese.
3. Continue to stir, until cooked, or how you like your "eggs"
4. Place on plate, and garnish with cilantro, tomato, and basil
